Islay Daiquiri

I spotted this recipe in the latest issue of Imbibe Magazine and just had to try it myself! Daiquiris are definitely one of my go-to cocktails– and delicious, peaty, smoky Scotch is yet another favorite of mine. I wouldn’t normally think to combine the two, but hey, I’ll try anything at least once.

The Daiquiri is the perfect island drink, so I love the idea of making a version that uses Islay Scotch: whisky that is made on the Scottish island of Islay. Then bring that all together with pineapple rum and coconut oolong syrup– this is just one delicious and unique cocktail.

ingredients:

1 oz Islay scotch (I used Laphroaig)
1 oz Plantation Pineapple Rum
¾ oz fresh lime juice
½ oz coconut oolong syrup
2 drops Bittermens tiki bitters

Top with freshly grated nutmeg


instructions:

Combine ingredients and shake with ice.

Strain into a coupe and garnish with freshly grated nutmeg.
